Italian Meatballs
in Tomato Sauce
on Zucchini “Noodles”
Serves 4
INGREDIENTS:
½ Tbsp Farm Boy™ Extra Virgin Olive Oil
500 g Farm Boy™ Italian Meatballs
1 pack Farm Boy™ Sugo di Pomodoro Tomato Sauce
800 g zucchini, spiralized (about 8 cups)
½ tsp salt
Parmigiano Reggiano cheese for garnish
DIRECTIONS:
1. In large saucepan, heat oil and cook meatballs,
turning often until browned on all sides, about
8 minutes.
2. Drain fat and add Sugo di Pomodoro.
3. Bring sauce to a slow boil and cover pan.
4. Simmer until meatballs are cooked through and
reach and internal temperature of 160°F.
5. While sauce is simmering, place zucchini in
colander and toss with salt.
6. Let sit 10-15 minutes, then rinse.
7. Serve meatballs and sauce over zucchini “noodles”.
8. Garnish with cheese.
