Brussels Sprouts, halved
2 tbsp Longo's Extra Virgin Olive Oil

This one-bowl cake is so easy that we
splurged on not one, but two garnishes
to make it extra special for your friends
and family.

Walnut Halves and Pieces
1 large pear (such as Clapp's Favourite,
Bartlett or Bosc), cored and diced

Sift 3/4 cup cocoa, flour, baking soda
and baking powder into large mixing
bowl. Add sugar, instant coffee, if using,
and salt; mix well. Make a well in the dry
ingredients. Add mayonnaise, water and
vanilla, Mix until well combined.
Vinaigrette:
3 tbsp Longo's Apple Cider Vinegar
1 tbsp Longo's Honey or
Longo's Maple Syrup
1 small clove garlic, grated
3/4 cup unsweetened cocoa
(plus 1 tbsp for dusting)
22/3 cups Longo's Organic
All Purpose Flour
11/2 tsp each baking soda
and baking powder
11/2 cups granulated sugar
2 tsp instant coffee (optional)
Scrape batter evenly into prepared pan;
bake in preheated 350°F oven for 45 to
50 minutes or until a toothpick inserted
into cake comes out clean. Cool in pan
for 10 minutes; turn out onto a rack to
cool to room temperature.

Vinaigrette: Whisk vinegar with honey,
garlic, salt and pepper; whisk in oil until
combined. Set aside.

white chocolate drizzle first followed

Toss sprouts with oil, salt and pepper;
spread out on large baking sheet lined
with Longo's Essentials Parchment
Paper. Roast in preheated 375°F oven
by raspberry drizzle. Serve immediately
with whipped cream, if using, or reserve
at room temperature for up to 3 days.

Raspberry Drizzle:
1/3 cup granulated sugar
1 tbsp cornstarch
for 25 to 30 minutes or until tender
and lightly browned. Add walnuts to a
separate small baking pan; toast on a
separate rack for 6 to 8 minutes or until
fragrant. (Make-ahead: Make vinaigrette
and toast walnuts. Roast sprouts and
reserve in refrigerator for up to 2 days.
Sprouts can be reheated for 5 to 1o
minutes before tossing with remaining
ingredients for a warm salad.)
Tips: For more control, each drizzle can
be transferred into a squeeze bottle,
piping bag or Longo's Essentials Freezer
Bag with the corner cut out. To help
drizzle "set up" on the cake, chill it for
20 minutes before decorating. Leftover
drizzle can be used to garnish serving
plates or saved for another use.
