SPICY KUNG PAO
SHRIMPS WITH PEANUTS

Prepare Peanuts (1 day in advance)
- Deep fry (or pan fry) peanuts, at 375 degrees Fahrenheit (2 minutes)
Shrimps
- Boil pot of water & add 12 shell-less shrimp (2 minutes)
- Remove & immediately run under cold water
- Set shrimp aside
Prepare spices and flavour ingredients in small bowl
- One tablespoon of vinegar and ketchup
- One teaspoon of hot garlic chili sauce or spicy sriracha sauce, and
Asian oyster sauce
- Pinch of salt and pinch of sugar
Prepare and place vegetables into large bowl
- Chop one-half large sweet Spanish onion & one bell pepper
- Dice pieces of one large celery stalk, carrots
- Add a few Asian baby corns & dried small red chili peppers
Fast Wok-Cook Vegetables (maximum 3 minutes)
- Place tablespoon of minced garlic into wok coated with very hot oil,
almost smoking
- After 10 seconds, add chopped vegetables
- Half-way into cooking vegetables, add hot chili oil and a pinch of hot
chili peppercorn seeds
- Two-third into cooking, add ingredients from small bowl and cooked
shrimps
Prepare sauce & serve
- In empty small bowl stir one tablespoon of corn or potato starch with
two tablespoons of water

- Pour mixture into hot wok & stir for 10 seconds until a smooth
creamy sauce, turn off heat, and immediately scoop onto serving dish
- Sprinkle cooked peanuts to garnish
- Enjoy with rice or noodles
